Paella is a delicious Spanish dish made with saffron-infused rice and whatever else you fancy: chicken, seafood, sausage, etc! It would be best to have it in a classic paella pan but you can use an alternative like a large skillet or wide pot as well. The Recipe: Instant Pot Paella with Chicken and Sausage

Pressure Cooker Paella with Chicken and Sausage

Total Time: 50 mins

Servings: 4 to 6 servings

Ingredients:

Low-sodium chicken broth (1 1/2 cup)

Large pinch of saffron threads (about 1/4 teaspoon)

1 cup frozen peas

1 tablespoon olive oil

3 cloves garlic, chopped

1 medium yellow onion, diced

1 red bell pepper, chopped

3 to 4 pieces boneless, skinless chicken thighs (about a pound), cut into 1-inch pieces

2 links (about 6 ounces) chorizo or other spicy sausage, sliced

1 teaspoon smoked paprika

1 teaspoon salt

300g (1 1/2 cups) short- or medium-grain rice

2 tablespoons chopped parsley

Instructions:

Add the chicken broth and saffron threads to your Instant Pot. Then let it sit while you do your other stuff.

Turn your Instant Pot to the Sauté mode. So, all the key is olive oil, garlics, onion and red bell pepper. Sauté until softened.

Stir in chopped chicken thighs and sliced chorizo. Brown chicken.

Add smoked paprika, salt and rice. Mix well.

Add the saffron golden chicken stock.

Secure the Instant Pot lid, place in pressure mode, and cook for 8 minutes.

Natural release 10 minutes, then use quick release to release any pressure that remains.

Add frozen peas and chopped parsley.

Serve immediately with lemon wedges.
